Cook supper with our favorite chef, Ming Louie. Ming will be making spring rolls. We’ll supply the ingredient list ahead of time so you can purchase what you need when you shop. Then tune in at the scheduled time and cook supper with Ming. He’ll answer your questions in real time. When the program is over, sit down and enjoy a delicious homemade dinner.

VIRTUAL PROGRAM

Instructions:

1. TO START YOU WILL NEED 35 round or square rice paper wrappers.
2. Fill a wide shallow pan with hot water and spread a dish towel nearby on a work surface.
3. Dip a rice paper wrapper into the hot water for about 3 seconds until softened and transparent.
4. Place the transparent wrapper onto the dish towel.
5. Place a bit of BIB LETTUCE or ICEBURG LETTUCE on the lower third of the translucent rice wrapper.
6. Add fillings of COOKED PROTEIN (my favorite is cooked shrimp), and roll up while adding VEGETABLE FILLINGS during the roll up process.
7. Cut the rolled filled transparent wrappers in half at an angle to make it look fancy.
8. Plate in a visually pleasing way and cover with a damp towel to prevent drying out.
9. Pass around dipping sauces to diners.

COOKED PROTEIN SUGGESTIONS:

• pulled rotisserie chicken
• barbecued or pulled pork
• shredded pot roast
• cooked shrimp
• deli ham
• deli turkey
• tofu, etc. 

VEGETABLE FILLING SUGGESTIONS:

• shredded carrots
• parsley
• mint
• bean sprouts
• shredded cabbage
• shredded lettuce
• spinach
• bok choy, etc.

DIPPING SAUCE SUGGESTIONS:

Peanut Sauce

Mix together:

• 1/4 cup hoisin sauce
• 2 tablespoons peanut butter
• 1.5 teaspoon tomato paste
• 1 teaspoon sugar
• 1/3 cup water
• 1 teaspoon vegetable oil
• 1.5 teaspoon minced garlic
• 1 teaspoon crushed red pepper

Spicy Sweet/Sour Sauce

Mix together:

• 1 teaspoon crushed red pepper
• Juice of 3 limes or 2 lemons
• 1/4 cup fish sauce
• 3 tablespoons sugar
• 1 tablespoon minced garlic
• 2 tablespoons grated carrots

Note:  There are some serious flavors available for the adventurous, but SIRACHA is the name of an already prepared not-too-spicy mayonnaise dipping sauce concoction, and is a good mild introduction.
